The marking difference of Sindhi biryani from other biryanis is that potatoes are used in italongside chicken or meat but preferably more with chicken while potato being the compulsory and main ingredients of this biryani. However the amount of meat or chicken used in it is comparatively less than other biryanis and spicy meat dishes. Sindhi biryani has mild spices and is heavily loaded with dry fruits and garnished with uncooked mint and chilies. It is sometimes even topped with chopped coriander, fried onions and green chilies.

Bombay Biryani

Bombay biryani is another one of the most popular biryanis around the world. Its origin is what we could guess from its name probably belonging to Bombay or Mumbai, a city in India. Like Sindhi biryani, the differentiating factor of Bombay biryani from other biryanis is that it can also be cooked with potatoes even if you make a use of chicken or mutton, you can still add potatoes if you wish. Bombay biryani is prepared with the layering method. In this method half-done rice are layered with the cooked gravy containing the spices, meat and potatoes and are then put on dum. The use of plum in this biryani gives a little sweet and delectable taste which blends with the rest of the spices just about right.
